Anthony O’Toole - Fat Tomato

 

Anthony O’Toole is a chef, writer, and founder of Fat Tomato, an edible garden in North Wexford cultivating over 500 organic heritage varieties. A passionate advocate for biodiversity, sustainability, and Irish food heritage, he combines culinary expertise with horticulture to create flavourful, sustainable food experiences. Anthony is also a Slow Food supporter and co-founder of the Taste Wexford food tourism network, working to connect chefs, growers, and food lovers across Ireland.
